Over the years, most people select a particular dog because the dog has certain qualities like: cute, my friend has a similar dog and he was so well behaved, they are small, they do not shed, they are a large dog, etc.

Dogs were breed with a purpose.   All dogs can be trained.  Their traits will also contribute to what they can do successfully.  A tea cup poodle can be trained to fetch but she is not capable of hunting even though the poodle was originally breed to hunt.  A Doberman would not be a good selection as a service dog to a disabled person.  Even though, the doberman is a very intelligent dog and can be trained to perform many if not all of the tasks a service dog is trained to do, he has a tendency in being aggressive and/or overprotective of his owner.  If a stranger attempted to pet him or assist his master, the situation could easily turn into bad event.
